So I have been busy lately trying to get things organized between a new addition coming in nine months and Hurricane Sandy, things have gotten out of control.  But the most amazing thing I was asked was by my mom.  “How do you can?”

I love my mom so much and this post is just for her.
 
 

This is my homemade applesauce.

Taking about ¼ a bushel of one kind of apple, I used Jonagolds, and ¼ of another, Cortlands.  I peeled and sliced and cored them.  The Apples were all placed into a pot with 1 1/2 cups of water and 4 cinnamon sticks.  I let all of this boil down.
 
 

In the meantime I put pint jars into a hot water both, letting the water and the jars start to boil together. 
 
 

When the apples are boiled down a bit and the cinnamon sticks are opened up, add 1 cup sugar and mix together. 
 
 
 
 Turn on the canning lids to a simmer. 
 
 
 
When the canning lids have simmered for 5-10 minutes pull from the heat and place in canning area.  Pull the applesauce and place in canning area.  Make sure to have a pot ready to dump excess water in.

Pull the first canning jar and place a funnel. 
 
 
 
Fill the jar until there is about 1/2 to 3/4 of an inch of headspace.  Wipe the rim of the jar.  Pick a lid out and place carefully on the jar. 
 
 

Then put the ring on and tighten until finger tight.
 
 

Place the jar in the hot water bath and continue with the rest.
 
 

When all the jars are finished, let process, sit, in the hot water bath for 30 minutes.
 
 

After that pull the jars from the bath and sit them on a stone board, not on your nice HD laminate countertop.  Let sit for a few hours, do not disturb.  Any jars that did not seal place in the fridge and eat immediately.
